RESPONSIBILITIES

– managing/overseeing all production, operational, and sanitation aspects of all culinary and stewarding operations throughout property
– oversees all culinary employees to achieve budget, food quality, and customer service expectations
– must have the ability to make effective use of all available resources, including time, labor and materials, to maximize productivity
– assist in training the front of the house and heart of the house staff during new menu rollouts
– assists in ensuring schedules are complete based on a forecast and allowable productivity standards; oversees fairness and consistency with schedule, floaters, overtime, etc.
– regular quality assurance and quality control inspections in order to maintain cleanliness of all back of the house areas; keeps equipment in proper working order
– maintain food, labor, and other expenses at budgeted levels while completing financial analysis and reports as assigned
– must communicate and work closely with catering sales team to ensure a quality guest experience
– maintain a consistent high level of food quality, kitchen productivity, and line of supply
– manages all recipe audits to ensure quality, consistency, and positioning
– ensure team members clean their areas as they perform their duties and assist with cleaning in other areas
– cross-train those within your department while encouraging, reinforcing, and supporting your peers and team demonstrates competent product knowledge by correct storing and handling of all perishables, maintaining quality, security, value, and integrity
– recognizes and corrects any product discrepancies and variations in quality, standards and recipe specifications
– performs as a “hands-on working Kitchen Manager” to assist in restaurant and banquet operations

QUALIFICATIONS

– high school diploma or equivalent
– minimum 3 years as a Kitchen Manager in a high volume food industry
– experience in improving kitchen efficiency, quality, food, and labor costs
– helpful to have a degree or certification from an accredited culinary arts institute, or apprenticeship certification
– must have excellent managerial, financial analysis, team building and communication skills/customer service
– must have knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment
– must be able to work any day of the week and any shift, including holidays and weekends
– must present a well-groomed appearance
– this is hands-on working on-line to maintain top quality

PHYSICAL, MENTAL, and ENVIRONMENTAL DEMANDS

– must be able to bend, twist, turn, push, and pull a minimum of 100 lbs. in a cart
– must be able to reach above and below the shoulder while carrying a minimum of 50 lbs.
– must be able to work independently and with a team
– able to cook using industry and property standard techniques, procedures, and equipment
– must be able to stand for prolonged periods of time and/or entire shift
– flexibility in fingers and hands to utilize kitchen equipment, bottles, glasses, knives, etc.
– responds to visual and oral cues while adapting to extreme temperature changes
– mathematical abilities including addition and subtraction required
– must be able to work at a fast pace in stressful situations
– is able to tolerate areas containing high noise levels and heat
– must be able to read, write, speak, and understand English
– familiar with all phases and operations of the kitchen and be able to have a sense of urgency and react to changing business demands
– express excellent communication skills

PINZ offers Health, Dental, Vision and PTO for all 40 hour a week employees. Employees accrue for 15 PTO days a year to start.
